For us, this summer has been all about slowing down and enjoying time with family and friends. We had a great time one afternoon hanging out at my Sister-in-law Rachel’s house, planting some succulent gardens and splashing in the pool. To eat, Rachel whipped up a delicious and easy Mango Salsa and you guys- I’m not kidding you when I say it was perfect! This salsa is so yummy because it is a well balanced combination of sweet, spicy, tart and overall really flavorful. We snacked on it a bit with tortilla chips, but ended up using it in chicken tacos for dinner and it was just so good! I’m sharing her recipe below.
Rachel’s Mango Salsa- [Serves 3-4]
Prep Time: 10 Minutes/ Cook Time: 0 Minutes/ Total Time: 10 Minutes
1 large, ripe Mango
1 Red Bell Pepper
2 medium Tomatoes
2 Jalapeños (use 1 -or none- if you want less spice)
1/2 Red Onion
Small handful of fresh Cilantro
1 ripe Avocado
1 TBSP Lime Juice
Salt + Pepper
- Chop all the fruits and vegetables into small pieces, with the exception of the avocado, and combine in a medium bowl.
- Remove cilantro stems and discard. Chop cilantro leaves lightly and add to the bowl.
- Add in the lime juice, then lightly sprinkle in some garlic powder, salt + pepper to taste. It doesn’t need a lot of seasoning so go light until desired flavor is achieved. Stir well to combine.
- Lastly, chop the avocado into small pieces, and gently fold in to combine, being careful not to mash the avocado.
- Serve + Enjoy!
Here are a few quick tips when making this recipe:
-Be careful when selecting the avocado for this salsa- you want one that is ripe, but not overly ripe. An avocado that is too ripe will break down in the salsa and cause it to be mushy!
-This salsa is wonderful served over chicken, fish, shrimp or pork! Be creative and try new ways to serve it! Even using it to jazz up a serving of white rice + black beans is delicious and a great vegetarian option!
-Make this salsa in small quantities, as it does not keep well in the fridge for long. You will want to use up any leftovers within the next day after it is prepared.
