Today I’m sharing my Sweet + Tangy Red Pepper Chicken, prepared in the CrockPot. This recipe is such a great combination of flavors- sweet red pepper, tangy pepperoncini & mild spice come together for a fall apart, melt in your mouth chicken that can be served in a variety of ways! This chicken is great in a taco, or served over rice, mashed potatoes (my favorite!), or steamed veggies. It can be rolled up into enchiladas, added into a quesadilla, or served on top of a salad. The best part about this recipe is that the sauce is made from pantry ingredients- meaning you literally dump + go! Minimal prep required, perfect for busy days when you need a meal on the table at the end of the night.
CrockPot Tangy Red Pepper Chicken- [Serves 4-6]
Prep Time: 10 Minutes/ Cook Time: 5-6 Hours/ Total Time: 5-6hrs + 10mins
3-4 Large Boneless + Skinless Chicken Breasts (thawed)
1/2 12oz. Jar of Trader Joe’s brand “Red Pepper Spread w/ eggplant & garlic”
1/2 16oz. Jar of Pace brand “Picante Sauce Medium”
1/2 16oz. Jar of Mezzetta brand “Deli Sliced Golden Greek Peperoncini”- JUICE ONLY
Salt + Pepper

- Set CrockPot to HIGH.
- Season both sides of all chicken breasts with salt + pepper and place in CrockPot.
- In a medium sized bowl, stir together Red Pepper Spread, Picante Sauce, and the JUICE ONLY from Peperoncini’s.
- Pour mixture into the CrockPot, covering all the chicken.
- Cover + cook on HIGH for 5-6 hours (or on LOW for 8-9 hours if preferred).
- When cooking time is complete, gently break apart or shred the chicken to desired texture + serve! (The chicken should fall apart very easily! This is how you’ll know it is cooked thoroughly.)

Here are a few quick tips when making this recipe:
-This recipe EASILY doubles! If you reference the recipe above, you will note only 1/2 a jar of each jarred item was used. Just double the number of chicken breasts and then use the full jars of each product above to make the sauce. This is great for a potluck event, or to have ready made chicken on hand for a week of meals!
-If you like more heat + spicy flavor, add the peperoncini peppers in the mix in addition to the juice from the jar. The peppers will cook down as the chicken cooks, and break up very easily when you shred the meat. This is why I recommend using the “Deli Sliced” peppers- they have no seeds or stems to deal with if you do decide to add them in. It’s delicious!
-If you do not have a Trader Joe’s grocery store available to you, a great substitute for the prepared “Red Pepper Spread” is to chop up one large size (two if you double the recipe) red bell pepper, and toss it in your blender with a few tablespoons of water. Blend this until it becomes a smooth puree, then mix it in with the other ingredients as directed above.
